The use of kitchen lighting in a commercial kitchen is of extreme importance for safety reasons as well as food preparation. Commercial kitchens are where food is prepared for the public, especially in restaurants. These places usually have large food preparation benches, large stove areas, benches for getting food ready for presentation, and washing up areas that would dwarf a normal kitchen sink. All these areas need to have good lighting.

In a restaurant the illumination over a food preparation area needs to be of a high standard for safety reasons. Those using sharp implements for cutting any kind of food, need to be able to clearly see what they are doing. It is also important from a food safety point of view that any food which is not suitable for public consumption can be clearly identified.
In the cooking area lighting is important also for safety reasons, as well as food safety and making sure meals are cooked as they should be. Chefs who are cooking, need to be able to see what they are doing and to know when food is ready, as well as to avoid burns. The presentation work area has to be well lit as this is the place where the ordered dish is finished before it is sent to the table of a customer.
The washing up area also needs good illumination. Dishwashers are often used for glassware and similar things but there is often a need to have a person available to do the washing up of trays, pots, pans and some very sharp tools. Poor lighting could be a cause of nasty cuts and time off, and may also cause disruption to the smooth running of a restaurant kitchen.
Often the best lighting is the fluorescent kind, this is placed where it can shed the most illumination on the working area. Whether it be the preparation, stove, presentation or washing up area they all need good lighting.
